This delicious salad can be made with as little as 3-4 ingredients! I dressed mine up a bit more, but the basic recipe is so simple and delicious I find myself craving it 3-4 times per week!
2 tomatoes chopped or 1.5 cups cherry tomatoes sliced in half
1/4 cup chopped red onion (optional)
1/4 cup chopped vegan mozzarella
1/2 cup chopped cucumber, cilantro and balsamic vinaigrette to taste with a handful of garden fresh nasturtium leaves and flowers (optional)
Simply combine all ingredients in bowl and toss with balsamic vinaigrette and top with fresh ground pepper and sea salt if desired. That's It!
